Baker Recipe for Choux Pastry

CHOUX PASTRY EASY MIX 1000 gm
Water 500 gm - 700 gm
Oil 400 gm
Fresh Eggs 1250 gm - 1400 gm (25 to 28 No.)

Baking Method

Blade Paddle
Mix eggs and water at slow speed for 1 min
Add the Choux Pastry Easy Mix and mix again at slow speed for 1 min
Scrape down the batter
Add oil and mix at slow sped for 1 more min
Again scrape down the batter and mix at high speed for approximately 7 mins
Pour the batter into the piping bag Draw the eclairs or shape it as desired on the baking tray
Bake at 200°C for 30 mins
Remove the baking tray from the oven
Re- enter the baking tray in the oven for drying further at 160°C for approximately 15 min to get the crisp
Cool completely and then fill your choice of cream in the choux pastry using a piping bag
Decorate it as desired
